During fermentation, this cider is bursting with unique aromas. To capture this unique aromatic phase, the winemaker decided to ferment Pétillant Naturel (meaning primary fermentatoin finishes in bottle) to capture these specific aromatics.
Aromatics of rose petal, fallen leaves, pine needles and crushed Jonamac apple. The mouthfeel is bright, dry and refreshing, with flavors of lemon rind and crisp apple, and a mineral finish.
Wine Profile
Vineyard Notes
The apples for this cider are sourced exclusively from our Jonamac apple orchard located on the William Heritage Estate property. Jonamac apples ripen very early in the season and during the cider fermentation process, this variety tends to be very aromatic.
Production Notes
The apples were handpicked and immediately pressed at a nearby cider house. The juice was then transported back to the winery to start fermentation in stainless steel tanks. Jonamac apples during fermentation are uniquely armomatic. This cider is unfined & unfiltered so it will have a natural hazy / cloudy look in the glass. This style offers a soft creamy texture and is more reminiscent of fresh pressed apple cider.
