Piquette is made from re-hydrated grape sinks previously used for wine production. In this unique case our winemaker decided to re-hydrate grape skins with estate grown Stayman apple juice.
The juice and skins were fermented with native yeast, pressed then bottled unfiltered. During the bottling process locally sourced wild flower honey was added to allow the wine to ferment a second time in bottle.
The resulting wine is low alcohol, cloudy, fizzy and fruit forward.
