This small production Ice Cider was made exclusively from apples grown on the William Heritage estate.The apples were sustainably farmed, tree-ripenedand hand-harvested. Once harvested, the apples weresent to a local cider mill to be crushed and juiced. The juice was then transported to an industrial freezerto be frozen. The frozen apple cider was brought back to the winery to slowly thaw. This process allowsthe winemakers to ferment a very small amount of the most concentrated apple juice, resulting in anelegant, dessert-wine style.
